  • 6 slices turkey bacon, chopped
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and dry the baby potatoes thoroughly before halving them.
  3. Chop the turkey bacon into small pieces for even crispiness.
  4. In a large bowl, toss the halved potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper until well coated.
  5. Spread the seasoned potatoes on the prepared baking sheet in a single layer and scatter the chopped turkey bacon on top.
  6. Roast in the oven for 30-35 minutes, flipping halfway through for even browning.
  7. In the last five minutes of roasting, drizzle honey over the potatoes and bacon for caramelization.
  8. Remove from the oven once golden brown; let cool slightly before garnishing with fresh parsley.
