  • 2 sheets of puff pastry (thawed)
  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups whole milk (warm)
  • 6 large egg yolks
  • 1 vanilla bean (or 2 tsp vanilla bean paste)
  • 4 Tbsp unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 400°F (200°C). Line baking trays with parchment paper.
  2. Roll out the puff pastry sheets slightly and prick them with a fork. Place on trays and cover with parchment and another tray to keep flat while baking.
  3. Bake for 35-45 minutes until golden brown. Cool completely.
  4. Trim the edges of the cooled puff pastry to fit snugly in an 8×8-inch square pan.
  5. In a saucepan, whisk together sugar, cornstarch, and salt; add egg yolks and mix well.
  6. Warm the milk in another saucepan until steam rises—do not boil.
  7. Gradually temper the egg mixture with warm milk, then return it to the saucepan.
  8. Cook over medium heat, whisking constantly until thickened (about 5-7 minutes). Stir in vanilla seeds and cold butter until smooth.
  9. Line the pan with foil, layer one piece of pastry at the bottom, pour custard on top, and place another pastry sheet over it. Refrigerate for at least four hours or overnight.
  10. Slice into squares using a serrated knife and dust with powdered sugar before serving.
