  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon butter

Instructions

  1. Season chicken with salt, pepper, garlic powder, and Italian seasoning. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown and cooked through (about 5-6 minutes per side). Remove and set aside.
  2. In the same skillet, melt butter and sauté minced garlic for about 30 seconds. Add orzo pasta and toast for 1-2 minutes.
  3. Stir in sun-dried tomatoes and chicken broth. Cover and simmer for about 10 minutes until orzo is tender.
  4. Pour in heavy cream and stir in Parmesan cheese until melted. Add spinach and stir until wilted.
  5. Return the chicken to the pan to warm through before serving.
