  • 1 small yellow onion
  • 8 oz. cherry tomatoes
  • 4 garlic cloves
  • ¼ cup sun-dried tomatoes
  • 1 tablespoon tomato paste
  • 1 (15 oz) can cannellini beans
  • 1¼ cup vegetable broth
  • 1 tablespoon arrowroot starch
  • 2 cups baby greens
  • ¼ cup vegan cream cheese
  • Juice of 1 lemon
  • Fresh basil for garnish

Instructions

  1. In a medium saucepan over medium heat, sauté the sliced onion in oil until translucent.
  2. Add halved cherry tomatoes and cook until softened.
  3. Stir in minced garlic, sun-dried tomatoes, and tomato paste, cooking until fragrant.
  4. Whisk arrowroot starch with a splash of broth; add to the pan along with rinsed white beans and remaining broth. Simmer until slightly thickened.
  5. Stir in vegan cream cheese (or coconut cream) and baby greens; cook until greens are wilted. Finish with lemon juice.
  6. Season to taste and serve hot, garnished with fresh basil.
