Ingredients

Scale
  • 5 pounds Yukon gold potatoes
  • 2 tablespoons unsalted butter
  • 2 cloves garlic (minced)
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream (or whole milk)
  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F and grease a medium-sized ceramic baking dish.
  2. Thinly slice the Yukon gold potatoes using a mandolin or knife, aiming for about 1/16th of an inch.
  3. In a large pot over medium heat, melt the butter with minced garlic until fragrant. Stir in the flour to form a roux and cook for 1-2 minutes.
  4. Gradually add heavy cream while stirring constantly until the sauce thickens (about 5 minutes).
  5. Mix in optional Parmesan cheese, thyme, salt, and pepper until smooth.
  6. Toss sliced potatoes with the warm sauce in a large bowl until evenly coated.
  7. Arrange potato slices upright in the greased dish and pour any remaining sauce on top.
  8. Cover with foil and bake for 30 minutes. Remove foil and bake uncovered for another 30 minutes or until golden brown.
