  • 12 oz chicken sausage (or turkey sausage)
  • 1 large sweet potato, peeled and cubed
  • 8 oz three-cheese tortellini
  • 5 cloves garlic, minced
  • 4 oz fresh spinach
  • 1/2 cup heavy cream
  • 6 cups water
  • Olive oil and seasonings

Instructions

  1. In a large pot, heat olive oil over medium heat. Add crumbled chicken sausage and cook until browned.
  2. Stir in Italian seasoning, paprika, sweet potato cubes, minced garlic, red pepper flakes, and tomato paste.
  3. Pour in 6 cups of water and bring to a boil; stir until the tomato paste dissolves.
  4. Reduce heat and simmer for about 15 minutes until sweet potatoes are tender.
  5. Add tortellini and cook as per package instructions (approximately 10 minutes). Stir in fresh spinach until wilted.
  6. Remove from heat; mix in heavy cream and season to taste.
