  • 4 medium-sized sweet potatoes
  • 1 cup fresh cranberries
  • 2 medium apples (such as Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • A pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). Bake the washed sweet potatoes directly on the oven rack or on a lined baking sheet for about 45 minutes until tender.
  2. Allow the sweet potatoes to cool slightly, then cut them in half lengthwise and scoop out most of the flesh into a bowl.
  3. Add cranberries, chopped apples, brown sugar, cinnamon, butter, and salt to the bowl. Mix well until combined.
  4. Spoon the filling back into each sweet potato half and arrange them on a baking sheet.
  5. Bake again at 350°F (175°C) for 15-20 minutes until heated through and golden.
