  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 large eggs

  • 1 cup old-fashioned oats
  • 1 cup corn flakes
  • 1 cup chopped and toasted pecans
  • 1/2 cup coconut flakes
  • 1 cup peanut butter chips
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Toast the pecans in a dry skillet over medium heat for 3-5 minutes until fragrant; set aside to cool.
  2. In a large bowl or stand mixer, beat the softened butter until fluffy.
  3. Add both sugars to the creamed butter and mix well.
  4. Incorporate the eggs and vanilla extract until fully combined.
  5. In another bowl, combine the flour, salt, baking powder, and baking soda; gradually mix into the wet ingredients without over-mixing.
  6. Gently fold in oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips.
  7. Chill the dough in the refrigerator for at least one hour or up to 24 hours.
  8. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  9. Scoop generous portions of dough onto prepared sheets, spacing them apart.
