  • 3/4 pound extra lean ground beef
  • 2 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 (15-ounce) can chopped stewed tomatoes
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/8 teaspoon cayenne pepper
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1/2 teaspoon salt

Instructions

  1. In a large saucepan over medium heat, brown the ground beef with minced garlic and chopped onion for about 10 minutes until the meat is cooked through. Drain excess liquid.
  2. Stir in chopped stewed tomatoes, beef broth, chili powder, cumin, oregano, and cayenne pepper. Mix well.
  3. Lower the heat and cover; let simmer for one hour while stirring occasionally.
  4. After an hour, add the rinsed pinto beans and salt. Cook for an additional 15 minutes until heated through.
