  • 8 oz mascarpone cheese
  • 1/2 cup coconut cream
  • 1 cup heavy cream
  • 14 oz sweetened condensed milk
  • 13.5 oz coconut milk
  • 12 oz evaporated milk
  • 1/2 cup alcohol-free vanilla extract
  • 24 ladyfingers

Instructions

  1. In a large bowl, whisk egg yolks with powdered sugar until pale yellow.
  2. Mix in mascarpone, coconut cream, and half of the coconut milk until smooth.
  3. In another bowl, beat heavy cream with powdered sugar until stiff peaks form; fold into the mascarpone mixture.
  4. Chill the cream mixture.
  5. Combine remaining condensed milk, evaporated milk, coconut milk, vanilla extract, and cinnamon in a bowl for soaking.
  6. Dip ladyfingers briefly in the soaking mixture and layer them in a pan.
  7. Spread half of the cream mixture over the ladyfingers; sprinkle with coconut flakes.
  8. Repeat layering with remaining ingredients and chill for at least 12 hours before serving.
