  • 1 1/2 cups chocolate chips
  • 2 cups vegan marshmallows crème
  • 2 cups semi-sweet chocolate chips (for topping)
  • 2 tablespoons coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time followed by the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients until just combined. Be careful not to overmix.
  6. Fold in the chocolate chips gently.
  7. Press the dough evenly into the prepared baking dish and bake for about 20-25 minutes until golden brown on top. Let cool completely.
  8. Spread the vegan marshmallows crème over the cooled cookie base.
  9. Melt semi-sweet chocolate chips with coconut oil in short bursts in the microwave until smooth.
