  • ½ cup Dutch-processed cocoa powder
  • ½ teaspoon baking powder
  • 1½ teaspoons baking soda
  • ½ teaspoon salt
  • ½ cup whole milk
  • 2 large eggs
  • ½ cup sour cream
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 1 cup hot water
  • 4 large egg yolks
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 2 cups heavy cream, divided
  • 3.5 oz. dark chocolate, chopped
  • 4.5 oz. white chocolate, chopped
  • 5 oz. milk chocolate, chopped
  • ⅓ cup heavy cream

Instructions

  1. Preheat oven to 350°F (180°C) and line two 8-inch round pans with parchment paper.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, milk, sour cream, oil, vanilla extract, and espresso powder dissolved in hot water; mix well.
  4. Combine both mixtures until smooth and pour evenly into prepared pans.
  5. Bake for about 35 minutes or until a toothpick comes out clean; cool completely before trimming tops.
  6. For the mousse: Heat one cup of cream with vanilla until steaming. Whisk egg yolks with sugar and cornstarch until pale; gradually add hot cream to temper yolks.
  7. Divide custard into two bowls; stir melted dark chocolate into one and white chocolate into the other. Fold whipped cream into each bowl.
  8. Assemble by layering mousse between cake layers; refrigerate for at least four hours.
  9. For ganache: Heat cream and pour over chopped milk chocolate; stir until smooth.
  10. Pour ganache over chilled cake and decorate as desired.
