  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, drizzle olive oil and season the chicken breasts with salt, pepper, and thyme. Sear for 5-6 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, sauté garlic for one minute before adding sliced mushrooms for another five minutes. Stir in spinach until wilted.
  4. Pour heavy cream and chicken broth into the skillet; simmer for about 3-4 minutes until slightly thickened.
  5. Place cooked chicken in a greased baking dish and pour the creamy sauce over it. Top with mozzarella and Parmesan cheese.
  6. Bake for 15-20 minutes until the cheese is melted and bubbly.
  7. Garnish with chopped parsley if desired before serving.
