  • 8 oz. pasta (penne or fusilli)
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and black pepper to taste
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 can (14.5 oz.) diced tomatoes
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, heat olive oil. Season chicken with salt and pepper; cook until golden brown and fully cooked (5–7 minutes). Remove from pan.
  3. In the same pan, sauté garlic until fragrant (30 seconds). Add Italian seasoning and red pepper flakes; stir.
  4. Pour in diced tomatoes, chicken broth, and heavy cream; bring to a simmer.
  5. Add cooked pasta and chicken back into the skillet; stir to coat in sauce.
  6. Mix in shredded mozzarella and grated Parmesan until melted.
  7. Garnish with fresh basil before serving.
