  • 2 slices of sourdough or artisan bread
  • 1/2 ripe avocado, mashed
  • 1/2 cup cooked shredded chicken (grilled or rotisserie)
  • 2 slices of cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise or aioli (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter (for toasting)
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mash the avocado and mix in lemon juice, salt, and pepper.
  2. If using mayonnaise, spread it on one side of each slice of bread. On one slice (avocado side facing up), layer the mashed avocado, followed by shredded chicken and cheese. Top with the second slice of bread (mayo side out).
  3. Heat butter in a skillet over medium heat. Grill the sandwich for about 3–4 minutes per side until golden brown and the cheese melts.
  4. Slice in half and serve hot.
