  • 1 cup heavy cream
  • 1/2 cup cherry juice
  • 1 teaspoon vanilla extract
  • 1 cup fresh cherries, pitted and chopped
  • 1 package ladyfingers
  • 1/4 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1/4 cup dark chocolate, shaved or grated

Instructions

  1. In a large bowl, mix together mascarpone cheese and heavy cream until smooth and fluffy.
  2. Add cherry juice and vanilla extract to the mixture, beating until well combined.
  3. In a separate bowl, combine granulated sugar and cherry preserves, then mix into the mascarpone blend.
  4. Gently fold in the chopped cherries.
  5. Dip each ladyfinger briefly in cherry juice (or substitute) and layer half in a baking dish.
  6. Spread half of the mascarpone mixture over the ladyfingers.
  7. Repeat layering with remaining ladyfingers and cream mixture.
  8. Cover and refrigerate for at least 4 hours or overnight for best flavor.
