  • 1 garlic head
  • 30 grams olive oil
  • 50 grams butter (plus additional for dough)
  • 200 grams all-purpose flour
  • 200 grams mozzarella cheese
  • 7 grams active dry yeast
  • 90 grams warm milk
  • 25 grams honey
  • Salt and sugar to taste

Instructions

  1. Roast the garlic by cutting off the top of the head, drizzling with olive oil, sprinkling with salt, covering in foil, and baking at 160°C (320°F) for about 2 hours.
  2. Prepare garlic butter by mixing roasted garlic with softened butter and parsley.
  3. Combine warm milk, yeast, and honey in a bowl; let sit until frothy.
  4. In a mixing bowl, combine flours, sugar, milk powder (if using), softened butter, salt, egg yolks, and yeast mixture; stir until combined.
  5. Knead the dough until smooth (15-20 minutes), then let it proof in a warm place for about 1.5 hours.
  6. Roll out the dough to 1/4 cm thickness and spread garlic butter over it.
  7. Sprinkle mozzarella cheese on top before cutting into rolls.
  8. Let cut rolls proof for another 30 minutes before baking at 175°C (350°F) for 20-25 minutes until golden brown.
  9. Brush with remaining garlic butter before serving.
