  • 4 Roma tomatoes
  • ¼ cup basil leaves, chopped
  • 1 garlic clove, minced
  • 1 tablespoon extra virgin olive oil
  • 12 teaspoons balsamic vinegar
  • Salt, to taste
  • 8 oz feta cheese block, crumbled
  • ½ block cream cheese (4 oz)
  • ½ cup sour cream
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon olive oil
  • Salt, to taste
  • More basil leaves, chopped
  • Red pepper flakes

Instructions

  1. Chop Roma tomatoes and mix with chopped basil, minced garlic, olive oil, balsamic vinegar, and salt in a bowl. Set aside.
  2. In another bowl, combine crumbled feta cheese, cream cheese, sour cream, minced garlic, lemon juice, olive oil, and salt until smooth.
  3. Layer half the creamy mixture in a serving dish followed by the tomato mixture. Top with the remaining creamy mixture.
  4. Garnish with chopped basil and red pepper flakes. Serve immediately with your choice of dippers.
