  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 4 salmon fillets (about pounds)
  • 2 medium peaches (thinly sliced)
  • Parsley (for garnish)

Instructions

  1. In a bowl, mix peach preserves, olive oil, soy sauce, apple cider vinegar, garlic, salt, black pepper, and red pepper flakes to create the marinade.
  2. Marinate the salmon fillets in half of the mixture for at least 30 minutes.
  3. Preheat your oven to 375°F.
  4. Sear the marinated salmon skin-side up in an oven-safe skillet over medium-high heat for about 2-3 minutes until golden brown.
  5. Flip the salmon skin-side down, add sliced peaches around it, and drizzle with reserved marinade.
  6. Bake in the oven for 12-15 minutes or until salmon reaches an internal temperature of 145°F.
