  • 2 tablespoons olive oil
  • 4 yellow onions (sliced thin)
  • 2 pounds Yukon Gold potatoes (washed and chopped)
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half or full-fat coconut milk
  • 1 teaspoon kosher salt
  • 1 cup freshly grated Parmesan cheese
  • Fresh herbs (chives, thyme, sage)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced onions and cook slowly for about 40-50 minutes until caramelized, stirring occasionally.
  2. In a large pot, bring water to a boil and add chopped Yukon Gold potatoes. Cook for about 20 minutes until fork-tender.
  3. Drain potatoes and mash in a bowl. Mix in butter, kosher salt, and half & half (or coconut milk) until smooth.
  4. Fold in half of the caramelized onions and Parmesan cheese until well combined.
  5. Transfer to a serving bowl, topping with remaining caramelized onions and fresh herbs before serving.
