  • 1 lb medium pasta shells
  • 4 tablespoons turkey bacon drippings (or butter)
  • 1/4 cup flour
  • 1 cup heavy cream
  • 2 cups milk
  • 1 teaspoon mustard powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 1 teaspoon hot sauce
  • 1 cup gruyere cheese, shredded
  • 2 cups cheddar cheese, shredded

Instructions

  1. Slice onions into even pieces and caramelize them in a skillet with butter and olive oil over medium heat for about 40-50 minutes until golden brown.
  2. Cook turkey bacon in another skillet over low heat until crispy; reserve drippings.
  3. Boil salted water and cook pasta shells until al dente.
  4. In the skillet with reserved drippings, create a roux by whisking flour for two minutes before slowly adding heavy cream and milk until combined.
  5. Season with mustard powder, thyme, garlic powder, and hot sauce; bring to a gentle boil.
  6. Stir in shredded cheeses until melted, then mix in caramelized onions and drained pasta.
  7. Top with chopped crispy turkey bacon before serving warm.
