  • 12 thick-cut slices of brioche bread (or brioche rolls), dried overnight
  • 1 3/4 lb apples (about 5), peeled and diced
  • 4 tbsp salted butter
  • 3/4 cup brown sugar
  • 1 cup milk of choice
  • 1 cup heavy cream
  • 4 eggs (room temperature)
  • Pinch of salt
  • 1 tsp vanilla extract
  • 2 1/2 tbsp all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C). Grease your baking pan or line it with parchment paper.
  2. In a saucepan, melt butter over medium heat. Stir in flour and apple pie spice, then add brown sugar until combined.
  3. Add diced apples and water, cooking until soft (10–15 minutes). Strain the juices into a bowl for later.
  4. For the custard: In another saucepan, combine milk, cream, salt, and vanilla over medium-low heat until warm. Whisk in eggs one at a time.
  5. Cut brioche into cubes and layer half in the prepared pan. Top with half the apple filling, then repeat layers.
  6. Pour custard over layers ensuring all bread is soaked. Bake for 35–40 minutes until golden on top but slightly jiggly in the center.
  7. Cool for 10 minutes before serving warm with reserved apple juices.
