  • 300 g all-purpose flour
  • 60 g granulated sugar
  • 1 tsp salt
  • 220 g unsalted butter (cold, cut into cubes)
  • 110 g water
  • 1 kg apples (Pink Lady, Royal Gala, or Fuji)
  • 75 g unsalted butter (for filling)
  • 190 g brown sugar
  • 1¼ tsp ground cinnamon
  • 1¼ tbsp cornstarch
  • 5 tbsp almond flour
  • Vanilla ice cream (or flavor of choice)

Instructions

  1. Prepare the pie crust by mixing flour, sugar, and salt. Incorporate cold butter until crumbly, then add cold water to form dough. Chill for at least 30 minutes.
  2. For the filling, melt butter in a skillet over medium heat. Add sliced apples, brown sugar, cinnamon, cornstarch, and water; cook until tender.
  3. Roll out chilled dough and line a pie dish. Fill with apple mixture and sprinkle almond flour on top.
  4. Cover with another dough layer if desired; brush with egg wash and sprinkle brown sugar.
  5. Bake at 180°C (350°F) for about 60-80 minutes until golden brown.
  6. Serve warm with scoops of vanilla ice cream.
