  • 2 medium apples
  • 30 g light brown soft sugar (for apple filling)
  • 1/2 tsp cinnamon (for apple filling)
  • 1/4 tsp mixed spice (for apple filling)
  • 1 tsp cornflour (cornstarch) (for apple filling)
  • 10 g unsalted butter (for apple filling)
  • 8 g light brown soft sugar (for crumble topping)
  • 17 g plain flour (for crumble topping)
  • 1/8 tsp cinnamon (for crumble topping)
  • 175 g unsalted butter (softened, for cupcakes)
  • 175 g light brown soft sugar (for cupcakes)
  • 3 large eggs (for cupcakes)
  • 175 g self-raising flour (for cupcakes)
  • 1/2 tsp cinnamon (for cupcakes)
  • 1/4 tsp mixed spice (for cupcakes)
  • 175 g unsalted butter (softened, for buttercream frosting)
  • 350 g icing sugar (for buttercream frosting)
  • 1 1/2 tsp cinnamon (for buttercream frosting)
  • 23 tbsp milk (for buttercream frosting)

Instructions

  1. Prepare the apple filling by peeling, coring, and chopping the apples. Cook them in a pan with light brown sugar and spices until tender (10-15 minutes). Cool completely.
  2. For the crumble topping, mix plain flour, light brown sugar, and cinnamon with softened butter until crumbly. Bake until golden (10-15 minutes).
  3. Preheat oven to 160C Fan/180C/350F. Cream butter and light brown sugar until smooth; add eggs one at a time. Fold in flour and spices.
  4. Divide batter into cupcake cases and bake for 20-25 minutes until golden.
  5. Once cooled, fill cupcakes with apple mixture and frost with cinnamon buttercream.
