  • 175 g unsalted butter (softened, for cupcakes)
  • 175 g light brown soft sugar (for cupcakes)
  • 3 large eggs (for cupcakes)
  • 175 g self-raising flour (for cupcakes)
  • 1/2 tsp cinnamon (for cupcakes)
  • 1/4 tsp mixed spice (for cupcakes)
  • 175 g unsalted butter (softened, for buttercream)
  • 350 g icing sugar (for buttercream)
  • 1 1/2 tsp cinnamon (for buttercream)
  • 23 tbsp milk (for buttercream)

Instructions

  1. Prepare the apple filling by peeling and chopping apples, then simmering with sugar, cornflour, cinnamon, and mixed spice until softened.
  2. Make the crumble by mixing flour, sugar, and cinnamon with butter until crumbly; bake until golden.
  3. For the cupcakes, beat butter and sugar together, add eggs one at a time, then gently fold in flour and spices. Fill cupcake cases two-thirds full.
  4. Bake cupcakes until golden; cool completely before filling them with the apple mixture.
  5. Whip up the buttercream by beating softened butter and icing sugar with cinnamon and milk until creamy.
  6. Assemble by piping buttercream on each cupcake, topping with reserved apple filling and crumble.
