  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 1½ cups peeled and diced apples (about 2 medium apples)
  • For the Streusel: flour, brown sugar, oats, cinnamon, cold butter
  • For the Frosting: cream cheese, butter, powdered sugar, vanilla extract, cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, mix flour, brown sugar, oats, cinnamon, and salt for the streusel topping. Cut in cold butter until crumbly and refrigerate.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Cream softened butter and sugar until fluffy. Add eggs one at a time and then mix in vanilla.
  5. Alternate adding dry ingredients and milk to the butter mixture until just combined. Fold in diced apples gently.
  6. Fill muffin cups two-thirds full with batter and sprinkle streusel on top.
  7. Bake for 22–25 minutes until a toothpick comes out clean. Cool in the pan for five minutes before transferring to a wire rack.
  8. Prepare frosting by combining cream cheese and butter until smooth; gradually add powdered sugar and other ingredients until fluffy.
  9. Frost cooled cupcakes as desired.
