  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • Tangzhong (from recipe above)
  • 6 tablespoons unsalted butter (room temperature)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream
  • 2 tablespoons apple butter

Instructions

  1. Prepare the filling: In a saucepan, combine diced apples, apple butter, granulated sugar, water, lemon juice, cinnamon, vanilla extract, salt, and cornstarch. Cook over medium heat until the apples soften.
  2. Make the dough: Combine warm water, bread flour, granulated sugar, instant yeast, salt, whole milk, heavy cream, egg, vanilla extract, and butter in a bowl. Knead until smooth.
  3. Let the dough rise: Cover and let it rise in a warm place until doubled in size (about 1 hour).
  4. Assemble the rolls: Roll out the dough into a rectangle and spread the apple filling evenly on top. Sprinkle with brown sugar and cinnamon before rolling tightly and slicing into pieces.
