  • ¼ cup heavy cream for caramel filling
  • 1 teaspoon vanilla extract for caramel filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the softened butter and brown sugar until fluffy.
  4. Mix in the eggs one at a time along with apple cider and vanilla until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Scoop rounded balls of dough onto a lined baking sheet and bake for 12–15 minutes until golden brown.
  7. For the caramel filling, melt butter in a saucepan over medium heat, stir in brown sugar and heavy cream; boil gently for about 3–5 minutes before removing from heat and adding vanilla.
  8. Once cookies are cool, spread caramel on one cookie and sandwich it with another.
